Mercurey Australia Pty Ltd has proudly represented Tonnellerie de Mercurey in Australia since 1992. Over the past three decades, Nadège and Tom Carson have supplied premium French oak to many of the country’s leading wineries, across all major wine regions. They also use 100% Mercurey oak in their own winery, Serrat.

Our coopers are driven by the mission to maintain consistency, style, and quality in every barrel — from the selection and blending of staves to precision toasting. The result is a reliable tool that subtly and consistently enhances the character of the wine.

To support this commitment, Tonnellerie de Mercurey has invested in a purpose-built, state-of-the-art cooperage. This facility combines the latest cooperage technology with high-quality oak and the expertise of master coopers to deliver the best possible outcome.

Mercurey’s quality standards are further reinforced by ISO certification, ensuring rigorous quality control, full traceability, and integrity throughout the process. The cooperage is also HACCP-certified, applying a structured, proactive approach to managing food safety risks.

All oak used by Tonnellerie de Mercurey is sourced exclusively through its own wood mill, NT-Bois, guaranteeing exceptional traceability and consistency. NT-Bois was the first stave mill in France to be PEFC-certified, recognising its commitment to sustainable forest management that is environmentally sound, socially responsible, and economically viable for future generations.

A cornerstone of Mercurey’s approach is the long, open-air seasoning of oak. All staves are matured for 24 to 36 months at the NT-Bois seasoning yards in Champagne — a critical step in ensuring harmony and integration between oak and wine.

Mercurey Australia Pty Ltd is also approved under AusIndustry’s Tradex Scheme, allowing a reduction in duty on 60% of barrels imported — savings which have always been passed on in full to our clients.
